What I Ate Today #2

Good morning!

My bedhead and I hope all you beautiful Internet people are having a great morning.

It’s Saturday, and I slept in this morning. I got up at 8:15am, and it was nice to have my first cup of coffee with sunshine streaming through the window. My plans to go for a walk at 10am were almost immediately derailed. My wife had a rough week at work, and apparently what she most needed to recover from it was a box of doughnuts. Vegan, gluten free doughnuts from a pop-up shop 25 km (15.5 mi) away. No problem. I had a quick breakfast and then embarked on the Great Pop-Up Doughnut Expedition. One hour and 4 minutes later, my mission was accomplished.

Another cup of coffee and a tasty omelette were on the menu this morning. Onions, red capsicum (bell pepper), mushrooms, baby spinach, ham, and cheese.

Clearly I need to work on my photography skills as much as I need to work on my omelette-folding technique. Some days I get it over without breaking, but not today. It may not look like much, but it tasted great. I added an extra slice of cheese, so it counts as 3 points instead of 2. Totally worth it.

Walking Outside in the World

After I delivered the doughnuts to my very happy wife, I drove to a popular walking track nearby and did my little half-hour stroll outside in the sunshine. There weren’t very many people out and about, but there were some, and it really was nice to get a little sun on my face.

I walked about 3000 steps in 30 minutes, then went to the shops to do a little shopping, and ended up walking another 2300 steps in 28 minutes. I hope I haven’t overdone it. I guess I’ll find out when I get out of bed tomorrow morning.

Lunch

After the mid-day walk and the shopping, I was running late for lunch, so I used some of the prawns I didn’t cook last night and through together a quick stir fry with veggies and a 1/2 cup of brown rice. Not my best stir fry, but it was tasty enough. I realised afterwards that we had some of those baby corns in the fridge. I wish I’d added a few of them. And some water chestnuts. And a chopped chilli, instead of getting all the spiciness from the sriracha, which overpowered the other flavours a little. Still, it was quick, easy, tasty, and it hit the spot. And it was only 4 points, bringing my total for the day to 7.

Mid-Afternoon Pick-Me-Up

By 3 pm I was starting to feel a bit drowsy. And my legs were a little stiff and sore after my walk. I thought a cup of coffee and a little sweet treat might give me a boost to make it through the afternoon.

Coffee & Bikkies

I love these Lotus Biscoff biscuits. At first I bought them just because they came in the little packets, making it easier to portion control. But they’re a really delicious little biscuit. Over the last year or so, they seem to be getting really popular, turning up in desserts at various cafes, and now it’s sometimes hard to find them at the shops. They sell a spread now, too, and I’ve heard they’re making ice cream as well, although I don’t think they sell it here. The spread is awesome, but I try to stick to the biscuits. Soooo good!

I’m not going to lie. I really wanted to eat those little biscuits, but I knew the coffee wasn’t going to keep me awake. I ended up snoozing on the lounge for a quick little half-hour nap. It was nice. Oh, the little packet with 2 biscuits was 3 points, bringing by total for the day up to 10 points.

Dinner

Saturday is Mexican Night, and while the boys had nachos, I had a naked beef burrito bowl sort of thing.

It looks like a massive amount of food, but that’s mostly because of the salad. It’s some brown rice, steak, and black beans, topped with a little cheese, sour cream, guacamole, and hot sauce. With a big salad, and some corn chips on the side. The sour cream and the corn chips really jacked up the points, but even at 18 points, that’s still only 28 points for the day, so I’ve got 13 points left. I had thought I might have another serving of that Halo Top ice cream, and while I’m not ruling it out entirely, I might just call it a night. We’ll see.

4 July Edit: I just realised that I could’ve cut this meal’s points down by using the Greek yoghurt I had in the fridge instead of sour cream. And really, a half serve of corn chips (as shown on the plate because they wouldn’t all fit) would’ve been plenty. If I’d done that, the meal would’ve been 11 points instead of 18.

No ice cream tonight. It’s 10 pm and I’m headed to bed. I finished the day with 28 points, I walked 10,217 steps, and I’m feeling pretty good. Goodnight, all you beautiful Internet people out there.
